Paisani was co-founded by two friends who graduated from the University of Massachusetts, Lowell. After studying four years in engineering and business, Matthew Minichiello of Canton and Ryan Palmer of Medford decided to dive into an entrepreneurial opportunity by starting a business to fill the void of an Italian food truck in the Boston area. The two friends have been creating innovative dishes together during their time spent at Lowell cooking for friends and family on occasions such as homecoming, the Super Bowl, and graduation. They have creatively positioned themselves in the Boston food truck market by combining their culinary skills with their outgoing personalities.
Paisani’s food truck has been open since the Summer of 2022 and as the business continues to grow, the quality and quantity of the food remains the same.
